Spa Thermostat, Needing More Sensitive Control?

We have a Spa 'n' a Box, great unit for our needs. Only problem is the thermostat range is huge--like, goes on at 100 and off at 108. I'd like to replace it with a more sensitive thermostat--any ideas please?

In winter it is nice and hot but in summer it is too hot. Can a thermostat be added later? wolf2croft...please edit your answer, I can't understand it, but it looks promising.
